Chocolate: Cultural Commodity

Description: Seminar, one hour. Exploration of cacao and chocolate in international context from Mesoamerican origins to present, with special consideration of surrounding social, cultural, political, and economic circumstances. Historical transformation of cacao into chocolate and its parallels to larger trends, with focus on cultural exchange between Europeans and Americans. Examination of its recent history, analyzing influence of past events on current concerns in industry, such as fair trade, labor, and imminent chocolate shortage. P/NP grading.
